I just rehydrated a package of my dehydrated sourdough starter. I am now on day 8 after rehydrating and let me just say that I have never had a more active starter. By day 6 it looked like this…

So I baked on day 7. I made Strawberry Pastries. Then today when I fed my starter, I made breadsticks but I used yeast with the starter. I will post a photo, but first I want to show you the way my starter is looking on Day 7 and I will show the structure of my starter as well.

Just look at the structure below! Wow!!

So today, on Day 8, I made breadsticks and they were so good!
