Sourdough Peach Cobbler

Ingredients

  • 1 cup all purpose flour

  • 1 1/2 cup sugar

  • 1/2 cup sourdough discard

  • 1 stick margarine

  • 1 tsp. baking powder

  • scant 1/2 tsp. salt

  • 1 cup milk

  • 1 29oz. can sliced peaches in their own juice

Directions

  • Melt 1 stick margarine and pour in deep 9x13 baking dish.
  • Mix flour, baking powder, 1/2 tsp. salt, 1 cup of sugar, 1/2 cup sourdough discard and 1 cup of milk together. Mix by hand stirring well. If mixture is thicker than thick pancake mix, add a bit more milk until you reach desired consistency.
  • Pour 1/3 of the batter in the bottom on top of the melted margarine. This will make a bottom crust.
  • Open the can of peaches and pour entire contents in a bowl. Mix with 1/2 cup of sugar, stirring well. Carefully spoon peaches, juice and sugar into the baking dish.
  • Pour remaining batter over peaches in baking dish. Bake in 350 degree preheated oven until it browns. Enjoy!

Sourdough Breakfast Bake

Quick to make nutritious breakfast for families on the go.

Ingredients

  • 2 Tablespoons olive oil

  • 1 cup sourdough starter/discard

  • salt and pepper to taste

  • 1/4 of small bell pepper diced

  • 1/4 of small onion diced

  • 1/2 to 3/4 cup shredded medium cheddar cheese (depending on how cheesy you like it)

  • 4 large beaten eggs

  • favorite breakfast meat small amount

Directions

  • Preheat oven to 400 degrees
  • Place about 2 Tablespoons of olive oil in cast iron skillet and place on burner with medium heat while you wait for oven to preheat. Using a spoon, spread the oil in your skillet and pour in 1 cup of sourdough starter/discard. You will hear a little sizzle which is good, Lightly salt and pepper the starter to taste. Let sourdough cook in skillet until bubbles form on the top and the top starts drying out. After bubbles form and crust begins to dry out a bit, you can now put the crust in the oven for around 10 minutes to crunch it up a bit before you add the egg mixture.
  • Dice pepper and onion.
  • In a medium sized bowl place the 4 eggs and whip them up with a fork.
  • If you use link sausage like I did (Conecuh), precook it for 1 minute in microwave making sure to pierce both sides of sausage with fork in several places. This helps the grease come out. Just don’t use any raw sausage. Dice the sausage in small pieces.
  • Mix together sausage, pepper, onion and 1/2 of the cheese with the beaten eggs. Season with salt and pepper to taste being careful not to oversalt because the cheese is salty.
  • Pour the egg mixture over crust and spread to cover it well. Sprinkle top with remaining cheese and sprinkle with black pepper. Turn off burner and pop the skillet into the preheated oven for 10-12 minutes, depending on how well you want your eggs cooked. I cooked mine well done. Enjoy!

Sourdough Chocolate Chip Pecan Cookies

Ingredients

  • 3 cups all purpose flour

  • 1 1/2 granulated sugar

  • 1 cup light brown sugar(not packed)

  • 1 tsp. salt

  • 1 tsp. baking soda

  • 1 tsp. baking powder

  • 1/4 cup milk

  • 1 cup(2 sticks) unsalted butter, browned

  • 1 cup sourdough discard

  • 2 large eggs

  • 1 1/2 cups semi sweet chocolate chips

  • 1 cup chopped pecans

  • 2 tsp. vanilla extract

Directions

  • In a large bowl add flour, sugars, baking soda, baking powder and salt. Set aside while you mix the wet ingredients.
  • In bowl of stand mixer or using a large bowl with hand mixer add browned butter than is cool, milk, sourdough discard, brown sugar, granulated sugar, eggs and vanilla extract. Mix ingredients until they are well mixed and creamy.
  • Begin to add in the dry ingredients a little at a time until all has been added. Beat well.
  • Stir in chocolate chips and chopped pecans by hand. Cover dough and refrigerate for 2-3 hours to chill the dough.
  • Cover baking sheet with parchment paper and being careful not to place cookies too close together, drop cookies by spoon onto parchment paper. (I used about 1/2 tablespoon of dough for mine)
  • Bake in preheated 350 degree oven for 15 minutes. Since ovens bake differently, watch to make sure they don't get too brown.
  • Remove from oven and transfer cookies to cooling rack. Makes about 6 dozen cookies. Enjoy!

Sourdough Raisin Bran Muffins

Ingredients

  • 1 cup all purpose flour

  • 1 cup raisin bran

  • 2/3 cup granulated sugar

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 1/2 tsp. cinnamon

  • 1 egg

  • 1/2 cup milk

  • 1/4 cup vegetable oil

  • 1 cup sourdough discard

Directions

  • This recipe is mixed by hand.
  • Mix egg, sugar, oil, milk and sourdough discard until well mixed.
  • Stir in flour, raisin bran, salt, baking powder and cinnamon. Mix well.
  • Spoon mixture into a muffin pan that has been sprayed with non-stick cooking spray. Fill each space about 2/3 full.
  • Bake in preheated 350 degree oven for about 25-30 minutes. Enjoy!
