Sourdough Peach Cobbler

Ingredients
  

  • 1 cup all purpose flour
  • 1 1/2 cup sugar
  • 1/2 cup sourdough discard
  • 1 stick margarine
  • 1 tsp. baking powder
  • scant 1/2 tsp. salt
  • 1 cup milk
  • 1 29oz. can sliced peaches in their own juice

Instructions
 

  • Melt 1 stick margarine and pour in deep 9×13 baking dish.
  • Mix flour, baking powder, 1/2 tsp. salt, 1 cup of sugar, 1/2 cup sourdough discard and 1 cup of milk together. Mix by hand stirring well. If mixture is thicker than thick pancake mix, add a bit more milk until you reach desired consistency.
  • Pour 1/3 of the batter in the bottom on top of the melted margarine. This will make a bottom crust.
  • Open the can of peaches and pour entire contents in a bowl. Mix with 1/2 cup of sugar, stirring well. Carefully spoon peaches, juice and sugar into the baking dish.
  • Pour remaining batter over peaches in baking dish. Bake in 350 degree preheated oven until it browns. Enjoy! Recipe by Carolyn
